Garden Enchilada Bake

Garden Enchilada Bake  Makes 6 servings ~ Adapted from Peas and Thank You by Sarah Matheny 1 c. quinoa, rinsed and drained 1 1/2 c. vegetable broth (or chicken broth) 1 15 oz. can tomato sauce, divided 2 1/2 t. chili powder, divided (consider using less, depending on how flavorful your chili powder is) 1/2 t. dried oregano 1 zucchini, shredded and squeezed to release all excess moisture* 1/3 c. cream cheese (Could be non-dairy, i.e. Tofutti. I think you could also use Greek yogurt here.) 1 clove of garlic, minced 1/2 t. cumin salt and pepper to taste 1 c. cheese, shredded (Optional, could be non-dairy. We like using Monterey Jack or Pepper Jack.) 1 3 oz. can sliced olives, drained (or other olives) 1 avocado, sliced cilantro for garnish (optional) *Try adding whatever additional fresh veggies you have on hand, including shredded carrots, corn kernels off the cob and/or torn dark, leafy greens Preheat oven to 375 degrees. Mushroom Onion Pot Roast

This is a really easy slow cooker pot roast that doesn't take much time to prepare, and is easy to get going when you leave to work. The most labor intensive part is skinning the onions, but our local grocery store often has them pre-skinned. Ingredients 2-3 pound beef roast (we like London broil a lot) 1-1.5 pound small mushrooms (our store sells them bulk, so its easy to pick out the small ones) 1 pound pearl onions, tops bottoms and skins removed 1/2 bottle brown ale (preferably malty, low bitterness) 1/2 c. water or broth 1 tsp dried thyme 1/2 tsp (or less) dried rosemary S and P If time allows, brown meat, them combine remaining ingredients in slow cooker, and cook until you get home from work. Serve with mashed, baked or roasted potatoes, or add potatoes directly to the pot for a one dish meal. The juice is pretty flavorful, but if you like you can reduce it. Sausage Potato Bake

So this isn't really a recipe of our own so much as a link, since Melanie and I don't change the recipe at all, let alone enough to justify reposting it. We did use some herbs de provence last time, which was nice too. This is one of those really simple one-dish meals that turns out amazingly every time, it's got a nice mix of veggies, starch and protein, and it's gluten free. Obviously, you don't need to use the brand name sausage from the recipe, especially if you live down the street from Kramarczuk's, but it is pretty tasty. Samosa Potatoes

Let's face it: samosas are delicious but a P.I.T.A. to make. Why bother with the pastry crust? Just eat the filling! These are a great side dish, perfect for potlucks, and if you're really ambitious you can use it as a savory pastry filling. 3 lbs potatoes (can be any kind, peels can stay on small reds or Yukon gold) 2 stalks celery 1/2 small onion 1/2 c. frozen peas 1 jalapeno pepper 3 green onions 1 stick butter 1 Tbsp. black mustard seeds 1 Tbsp. whole cumin seeds 2 tsp. fresh ginger 1 tsp. turmeric 1 tsp. black pepper 1 pinch hing powder OR 1 clove garlic, minced loads of salt Boil the potatoes in well-salted water until tender, then drain. Smash them up a bit with a spoon. Dice celery, onion, and jalapeno very small. Slice green onions into little rings. Heat the butter in a large pan until it is bubbling. Roasted Cauliflower Yogurt Dip

Ingredients: 1 head cauliflower (2 lb), cut into florets 2 Tb olive oil 1/4 tsp whole cumin seed salt red pepper flakes 1 cup plain yogurt (I use Greek yogurt) 1 Tb lemon juice Method: 1) Heat oven to 425 F. On a rimmed baking sheet, drizzle florets with oil and sprinkle with cumin seed, salt, and red pepper flakes. 2) Roast, stirring once, until golden brown and tender, about 25 min. Let cool. 3) In food processor, purée cauliflower with yogurt and lemon juice. Season with salt. 4) Transfer to serving bowl. Garnish with red pepper flakes. Serve as dip with radicchio or endive (separated), carrot sticks, crackers, etc. * This dip only gets better as the flavors meld. Enchiladas Verdes

Well, we can't have a red enchilada recipe without a green enchilada recipe! Heck, we even have a half-assed mole enchilada recipe . I took it upon myself to make these from scratch, since it seems like there are always tomatillos for sale around here, and my food processor is working again. You can use canned sauce instead, if you like. Salsa Verde 1.5 lbs (6-7) tomatillos 1 large onion 2-4 chiles verdes 3 cloves garlic 1 lime, juiced 1 small handful cilantro 1/2 tsp. ground cumin 2 tsp. salt, or to taste 1 tsp. sugar, or to taste 1 c. chicken broth, with extra chicken boullion added Remove tomatillo husks and cut onion in half. Place tomatillos, onion, and chiles underneath the broiler (or on the grill) to roast, turning a few times as needed. When they have lots of brown, roasty edges, remove them and let cool. Remove the roasted skin from the chiles. Feed all sauce ingredients into food processor and process until you have a chunky-smooth sauce. You will probably have sauce le...

Cottage Cheese Pancakes

These are delicious and a nice break from flour-based pancakes. I have noticed a nice assortment of organic and high-quality brands of cottage cheese at the coop, and had sort of forgotten about keeping it on hand. A couple spoonfuls are a great pick-me-up in the afternoon or before dinner is ready. This recipe was found on the internet, with a few adjustments, but this is how I did it: 1 cup oatmeal* 1 cup cottage cheese 4 eggs 1 tsp vanilla 1 tsp cinnamon *I ran the oatmeal through the food processor first to break it down a little - if you have the quick-cooking variety you shouldn't have to do this first. Put all ingredients into food processor, blast a few times, and set aside. It will get thicker from standing. On a medium hot non-stick or lightly oiled griddle, make silver dollar-size pancakes; turn when slightly bubbly. Cook a little longer on side two. Serve with your favorite topping.
